Sunday Night Already?

I’ve missed you! I can’t believe it’s been so long since I blogged. It’s a combination of getting home so late and having a broken laptop!

It’s been a fun weekend! Friday I went swing dancing and am officially addicted. Saturday Dixie and I visited the dog park and watched HLS with Ryan. Today Ryan and I enjoyed lunch at Whole Foods and then ventured to IKEA for some necessities (after my 32 mile bike ride)! Whew!

Instead of showing all my eats, here are my favorites from the last few days…

Mexican spring rolls (refried beans, salsa, carrots and spinach in rice paper) with carrots and a peach…

A chocolatey soy chocolate shake :)

Quinoa with asparagus, corn and sundried tomatoes with Ryan!

Champagne grapes, a pink lady apple and some of Ryan’s yummy homemade almond butter!

I am so low on groceries so I attempted to make a Flat Out pizza with the ingredients I had! First I spread sautéed sundried tomatoes, onion, garlic and olive oil onto a Flat Out wrap.

Then I layered with fresh spinach….

…sprinkled tons of nutritional yeast and balsamic vinegar…

..and baked at 375 for about 15 minutes! It tasted like a yummy and fun flatbread!

Healthy ice cream! 1.5 frozen bananas, some soy milk and cocoa all whipped in the food processor. Heavenly!

Speaking of heavenly… today’s lunch at Whole Foods with Ryan! I haven’t eaten at WF since I went vegan. I was surprised how easy it was and still 100% tasty choosing dishes made without animal products. I didn’t miss them at all!

Of course I got a vegan chocolate chip cookie to enjoy while exploring IKEA (I did enjoy the whole cookie)!

Ryan and I had tons of fun in the monstrous everything store that is IKEA. I’ll be posting my goods soon :)

Whew, what a weekend! Tonight I’m playing catch up to get ready for a great week.

Feelin’ Cheesy

Have I mentioned how much I love my Dixie? I love Jack, too. Maybe tomorrow you’ll get a photo of his handsome butt!

My 3-part breakfast included soy milk, a green monster (soy milk, Amazing Grass, blueberries, flax, spinach and ice) and some cereal. Perfect :)

Around 10am I took a break from organizing the closets to head out for a run. I brought a small bottle with water and a bit of OJ for a little boost.

It was wayyyy too hot out! I had planned 4 miles but instead got in a tough 3.2 run. Please refrain me next time I try to run when the sun is shining.

And then I had cheese. Cheese wha?! Yep, the vegan spontaneously had a tablespoon of this (delicious!) cheese.

I don’t want to eat more cheese because it’s important to me to give this vegan thing a chance. Also, my stomach has hurt all day since that cheese. All the stomach pains that went away when I went vegan came back as soon as I had this cheese. Lesson learned?

I also ate some leftover grilled asparagus before meeting Ryan and Megan for lunch at Dandelion Communitea Cafe.

Since going vegan I’ve been all about trying new things. I ordered the Fakin Lettuce & Tomato.

The sandwich was like a BLT although with yummy tempeh instead of bacon! I loved the flavors of this sandwich!

We also stopped by Whole Foods for vegan chocolate chip cookies!! I savored every yummy, cruelty-free bite!

While whipping up vegan Mac N Cheese (I didn’t really follow the recipe… but have I ever?!) I snacked on some crack/garlic bread.

Sunday Love

Hello! Happy Sunday night!

Sunday is my favorite day. For me Sundays are about church, family and taking it easy.

Tonight I was exhausted and hungry- perfect reasons to hit up the Whole Foods bars as far as I am concerned!

I have been craving their tofu the whole weekend!

I got my typical salad with Kung Pao tofu, cilantro-pesto tofu and a gouda pasta salad. It is impossible to describe just how delicious this dinner was. 1.06 pounds of pure heaven, really.

The star of my salad is always these vegan bacon bits- Bac-Uns. They add so much flavor and crunch! Today I finally sought them out so I can make yummy salads with it at home!

While I enjoyed my lovely dinner I flipped through the pages of the free Tampa Bay Wellness Magazine. I was surprised how great this magazine was- especially for being free! The mag had tons of useful articles and interesting tips. (If you click on the link you should be able to read through the current issue.)

Love Whole Foods

I have been to Whole Foods this past Friday, Saturday and Sunday… all days to buy something and eat a meal. The staff are starting to recognize me and I think they’re catching on to the craziness.

At the very top is one of my meals. With it I bought this hint Honeydew Hibiscus water. I was not a fan. It tasted like a flower had been sitting in regular water. It made my mouth dry. Weird. Maybe some of the other flavors are better?

But David did share some of his Kettle Brand New York Cheddar potato chips. YUM!

The Kettle Brand is perfectly crispy with tons of flavor. The perfect chip.

And we drooled over some Whole Foods baked goods.

And I was quite repulsed by some of their non-vegetarian items. You should’ve seen the octopus! Above is a Grouper… minus the eyes.

I bought these TerrAmazon Raw Cacao Nibs. I’m embarrassed to admit I thought they were COCOA pieces. Yeah, notsomuch. They’re chock full of antioxidants but pretty bitter.

Do you know what to do with Cacao Nibs?

Goodness



I got a raise!

With the extra funds from my raise + money saved from gas, I can now afford to comfortably move near my work. This would end my 3-hours each day commute. I will be within a mile from work (and gyms, awesome restaurants, movie theaters, the Florida Aquarium, historic districts, SOHO and more!) and about 10 minutes from my school. I am so excited about this.

1.I will be able to walk more places and leave my car behind.
2. I will have an extra 3 hours! each day. (Hello, morning workouts and afternoon runs!)
3. Living solo will make me more accountable for my sleep, activity and eating habits. Everything I put into that kitchen and eat will be my choice. Hello, Whole Foods (5 minutes down the road!)!!

I don't have an exact place yet, but 'll keep you posted! =)


This is Bayshore, .5 miles from my work. I love running this!

About The Plan. I'm giving it 2 weeks hardcore to start. Monday May 26- Sunday June 8. It will be clean eating, a set bedtime and a guideline for exercise. This isn't about limitations- it's about treating my body to what makes it feel great! More to come!
