I remember thinking going vegan meant committing myself to a life lived under a rock eating nothing but carrot sticks and hummus. I thought I wouldn’t be able to eat out and have fun with my food. Oh, the foolishness.
Tonight David and I enjoyed Tijuana Flats. Since I’ve been working so much we’re really trying to make the best of the time we have together. And I think going out to dinner makes for a nice evening :)
We started with chips and salsa (I ate SO MANY chips!!!). For my entree I ordered a black bean taco salad with no sour cream or cheese and salsa as my dressing. Instead of the greasy taco shell I requested a whole grain tortilla… they brought me three! Tijuana Flats was great about my order’s specifications. We had a fun, healthy and easy night :)
I know I’ve been slacking from blogging. And I’ve missed you! I’m suddenly working so much and I haven’t figured out how to rearrange the other things in my life… like blogging and studying! I did want to show you this light dinner I made for us a few nights ago… roasted acorn squash and carrots with kidney beans for me and organic chicken for him. I thought this meal was too pretty to not share! (I usually eat way more than this but I had just devoured a big bowl of cereal!)
Oh… and there has been lots of Holey Donuts!!! I won Marathon Val’s Holey Donuts giveaway a while back and these babies arrived last week. (Most are vegan.) Donuts, donut holes and ooey gooey cinnamon rolls…. it was heavenly, really.
I’ve never eaten so many donuts in my life! These babies are addicting! Luckily they’re made with better ingredients and lower in fat than traditional donuts.
My review? They’re pretty good. I like how they come frozen with dry ice in small boxes. You just throw the boxes directly into your freezer and pull out a few donuts to thaw and/pr microwave whenever needed. I still prefer a Krispy Kreme for taste, but these are still really good! I think the cinnamon rolls are pretty wonderful, too.
Oh, yeah….
To keep up with my marathon training, I ran 8 miles Saturday after 9 hours of work!!! Eight miles and it felt so good…
And then Sunday David and I biked 62 miles.
Did you read that?!?!!?!??!?!
I refueled with donuts for both momentous events.
