E- to the -ASY

I remember thinking going vegan meant committing myself to a life lived under a rock eating nothing but carrot sticks and hummus. I thought I wouldn’t be able to eat out and have fun with my food. Oh, the foolishness.

Tonight David and I enjoyed Tijuana Flats. Since I’ve been working so much we’re really trying to make the best of the time we have together. And I think going out to dinner makes for a nice evening :)IMG_6197

We started with chips and salsa (I ate SO MANY chips!!!). For my entree I ordered a black bean taco salad with no sour cream or cheese and salsa as my dressing. Instead of the greasy taco shell I requested a whole grain tortilla… they brought me three! Tijuana Flats was great about my order’s specifications. We had a fun, healthy and easy night :) IMG_6188

I know I’ve been slacking from blogging. And I’ve missed you! I’m suddenly working so much and I haven’t figured  out how to rearrange the other things in my life… like blogging and studying!IMG_6185  I did want to show you this light dinner I made for us a few nights ago… roasted acorn squash and carrots with kidney beans for me and organic chicken for him. I thought this meal was too pretty to not share! (I usually eat way more than this but I had just devoured a big bowl of cereal!)IMG_6162

Oh… and there has been lots of Holey Donuts!!! I won Marathon Val’s Holey Donuts giveaway a while back and these babies arrived last week. (Most are vegan.) Donuts, donut holes and ooey gooey cinnamon rolls…. it was heavenly, really.

I’ve never eaten so many donuts in my life! These babies are addicting! Luckily they’re made with better ingredients and lower in fat than traditional donuts.

IMG_6160 My review? They’re pretty good. I like how they come frozen with dry ice in small boxes. You just throw the boxes directly into your freezer and pull out a few donuts to thaw and/pr microwave whenever needed. I still prefer a Krispy Kreme for taste, but these are still really good! I think the cinnamon rolls are pretty wonderful, too.

 

Oh, yeah….

To keep up with my marathon training, I ran 8 miles Saturday after 9 hours of work!!! Eight miles and it felt so good…

And then Sunday David and I biked 62 miles.

Did you read that?!?!!?!??!?!

I refueled with donuts for both momentous events.

FOOD!

Whew, was yesterday crazy! I started a new part-time job (which is actually going to be full-time in terms of hours) and by the time I got home and grocery shopped at two stores I was so tired. But that didn't stop me from getting in a run!

After a day of too many sugars, simple carbs and stress I needed a run to redeem to the day. From the moment my Asics first hit the pavement all my worries pounded away. I normally run 4 minutes and walk 1. Last night I ran 4 miles in 38 minutes in the dark and it was amazing. That run left me energized and feeling good. Ahh, running...
I had more oats with Stevia in the Raw and soy milk and then grapes before heading to work. I am going to spare you the rest of the days eats since they were basically just Zbars, nuts, vegan donuts and cereal. Ugh! I'm getting tons of veggies in today!!
In order to finally restock the kitchen I headed to Costco.
There I found these Peeled Dired Fruit Snacks. The only ingredients are essentially dates, aprictots and figs. The best part was that this bag was only $2.97!

I needed a few more things after Costco so I decided to give Aldi a try. What a different store! You had to pay to use a cart, everything was in boxes, the selection was small and weird, all products were brands I'd never heard of... very interesting! I ended up buying $5 worth of frozen veggies, crackers and onion. I wouldn't go back to Aldi.
My Costco loot:
Cinnamon, soy ginger dressing, Peeled fruit, frozen organic broc, pink lady apples...
...fresh (yummy!) asparagus, a salad mix (David uses)...
...whole grain bread, edamame, Flat Out wraps, frozen strawberries
...fresh strawberries, spinach...
...OJ and soy milk...
..and David's items: waffles, syrup, milk and cheese.

Looking over our groceries I have to admit I'm pretty impressed. We have tons of fruits, veggies and whole grains. Other than the last few items everything is vegan. Everything is vegetarian and it's organic when possible. I love to know I'm feeding David and myself with good fuel :)
I have to include this car I saw on the way home from Costco. Notice the stickers saying " EARN REPECT...BE PROUD...SPEAK...IN PUBLIC." The license plate says "ENG ONLY" and there's an NRA sticker in the back windshield. Hah!

Hello, internet. Today has been one of those days. I am about to leave for swing lessons, so I'm hopeful that turns my day around!

We are officially out of food. I have one more portion of soup in the freezer and tons of oats and quinoa, but nothing to go in them. Not a fruit or veggie in sight.
I had to be up super early to babysit this morning. I had 1/2 c. oats with 2 packets Stevia in the Raw and soy milk on my drive. No banana, cocao nibs or any other fun add-ins. Surprisingly, I enjoyed the taste of the plain-ish oats for a change.

While babysitting I had several handfuls of Cheerios. Good for my cholesterol! ;)

I tried to find a Publix so I could pick up adequate food for the day, but all I could find was a gas station near work. Two vegan options: a banana and pistachios. I ate the naner with PB. This was "lunch."

In the "how many nuts can I consume?" spirit I had some peanuts from this container.

Like I said before, my day was rough. All I wanted was a big brownie for dinner. I compromised and ate a reheated black bean/veggie mixture that I made months ago while the single-serve brownie baked. I'm good at compromising :-)


Sorry for the bummer of a post... it's been a bummer of a day. I'm determined to choose happiness tonight. After all, the highs of life aren't complete without a few lows in between.

Swiiiiiinng

Sunday morning pancakes and a shortbread cookie from Ethos Vegan Kitchen!

Hi :-)

I am alive! Life has been crazy since Friday with very late nights, tennis, swing, ice cream and movies... I've been getting home after 3am! No blogging for me at that time.

Here are some things that have fueled me!
Apples shared with Dixie

Lots of smoothies with Amazing Grass to keep me healthy and energized!

I've been making this pizza every day! I rub balsamic vinegar on a Flat Out wrap and then top with my spread. For the spread I combine frozen peas, kidney beans, sundried tomatoes, nutritional yeast, spices and olive oil in a food processor. To die for.

Saturday morning I got to bed at 5am and Dixie insisted I wake up at 8am and take her to the dog park. Of course she won!

Lots of oats... of course!

Funny story: I convinced Ryan that we should give blood Friday... I tested too low for iron and only Ryan was able to actually do it! Bwahhaha!!

My iron has been low all my life, but I am definitely paying extra attention to the issue..

I got to try the new PB&J Larabar! SO good! It tasted just like a natural PB&J sandwich!

Swing photos! I was bummed because the two photos are online don't show off any of my fancy moves. These were from Saturday night's swing that is held at a local swing club instead of the college. The swing club has people of ALL ages... hence the photo of me dancing with the newbie senior :) So much fun!
Today David comes home!!! I've missed him the past 3 weeks, but I have had a lot of fun, too!

Getting Bare

Hello and happy Friday! After world's best naner oats this morning I enjoyed an awesome 31-mile bike ride this morning and now feel amazing!
On my ride I brought a pink lady and some GU Chomps. I had a chomp at mile 10, the apple at mile 18 and another chomp about 5 miles after that. I drank tons of water, too!
I knew I couldn't shower and clean up before eating without something in my belly so I had 1/2 a frozen naner when I got home. I shared a bite with Dixie :)
My fridge is bare! I might have to break down and go shopping Sunday.
Lunch was delicious (as all post-workout meals are): reheated carrot sweet potato soup and a Flat Out Wrap toasted with TJ's balsamic vinegar and nutritional yeast. YUM!

I'm off to study before heading out for a fun night! Enjoy your weekend!

Hibernating

Jack makes it very clear that he doesn't think I should spend my time studying!

My day has been all about eating and sleeping. Seriously, I feel like I'm hibernating!

Yesterday I ran 7 miles, walked Dixie, played tennis, studied and worked. It must have worn me out because I woke up tired (even after sleeping for seven hours) and I took a two and a half hour nap this afternoon with Dixie (was supposed to be only 20 minutes).

I was hoping to take a long bike ride today, but my body was definitely not up for it. Instead I took Dixie for a 30 minute walk and I'll squeeze in some yoga tonight.

I was so excited to buy bananas last night because I got my naner oats this morning with soy milk, cinnamon and cacao nibs! You all must buy organic bananas- other than being healthier, the taste is so much sweeter and more pronounced. I definitely taste the difference.
In my morning oats I added a packet of Stevia in the Raw. I connected with them via their Twitter and I was really impressed at the nice sample they sent over: a personalized letter, recipe cards and a 50 ct. box of the product! I really like the Stevia, too. It was perfectly sweet.
I enjoyed a pink lady apple... and a granola bar!... mid-morning. My appetite was definitely high from my run the day before.
Lunch was awesome!
While quinoa cooked in the pot I sauteed olive oil, garlic, soy sauce, carrots, corn and peas in a skillet. After 15 minutes I combined the two pans for one delicious meal!
My sweet tooth BEGGED for a strawberry fruit bar :)
I'm a pathetic food blogger. When I made lunch I doubled the recipe so I could have lunch for the next day. Well... I ended up eating it for dinner! Really my meal was just a base so I could eat yummy peanut sauce!

Dessert was an attempt at banana ice cream with a twist. I enjoyed it, but it wasn't what it should have been!
Aaaand I had cream of wheat with a bit of Stevia and soy milk. Yep, I'm hibernating. I know I'm hungry because I'm exercising more, but I also believe part of it is stress. I try to listen to what my body really wants but I'm not too worried since my choices are all pretty healthy.

This evening Dixie has taken a walk, had a bath and had her teeth brushed... I think it's time I clean up myself :)

My friend Pam is coming over tomorrow for a sleepover (!!!) so I might not blog until Saturday. Either way, happy weekend!
