Big, Gooey Chocolate Chip Cookie

A big, gooey chocolate chip cookie- that’s all I want after long runs!

This morning I ran 18 miles. Pretty crazy, if you ask me :)

Everything in me wanted to skip the run entirely. I was supposed to leave at 5:50 a.m.- I left at 7:00 a.m.! It took everything in me to get out that door. Once I started running, it was effortless. With each run I feel how much stronger I’m getting. I averaged a 10:40 pace.

Yesterday I was craving banana bread so I made Veganomicon’s low-fat banana bread. This was the best recipe I’ve ever used!

Putting the bread into a muffin tin was my attempt at portion control. It, um, didn’t work. No more muffins in this house!

IMG_6985IMG_6992  For lunch today I had a spinach salad with soy ginger dressing and veggies and black mahogany rice. (Fill in the blanks with the rice- I got a little hungry pre-photo :)IMG_6987If you haven’t tried this rice yet, try it! This rice has a deep flavor and is slightly chewy and nutty. I know Whole Foods carries it for sure.

IT’S FRIDAY!!!!!!!!!!!!!!!!!!!!!!!! I’m catching up on some Grey’s on hulu before going into work. Tomorrow is VegFest and I’m super excited.
