I am proud of myself right now.
All day I had planned on a long afternoon bike ride. That ride was delayed when David asked me to wait until he got home from work…. and then the pouring rain kept us from going at all! Sitting in sunscreen and ugly bike shorts I was pretty bummed and decided to just skip working out. Well, 30 minutes later I stood up and said “That’s it! I am going for a run!” I enjoyed a wonderful, rainy 2.7 mile run in 27 minutes to the grocery store to pick up a few things for dinner. Perfect.

I am also proud of myself because all my food today was 100% vegan, homemade and delicious. Seriously, I ate so well!
Spring rolls like these are perfect to use up leftovers. My three had sweet potatoes, black beans, mango, spinach and carrots. They were dipped in a peanut/teryaki combo and served with a side of fresh cherries!

All day I was thinking about homemade pizza. Usually making pizza is super time consuming and expensive, but my vegan version was cheaper and much quicker to put together! It was super yummy, too!
My half had a minced garlic base topped with tomato sauce, sliced tomatoes, basil + pepper, balsamic vinegar, fresh spinach and carmelized onions. YUM! I ate every bite (of course) and still felt great afterward.
I enjoyed a Yogi Tea while watching Frost Nixon with David! It was a great movie!
