Happy Saturday! Have any fun plans for this weekend? I am itching to do a long bike ride. We will see! But first what went down yesterday!
Working on more consistent eating, I started my day with a big green monster and toast (with Smart Balance and jam).
Later on a yummy glass of soy milk :)
And a balanced lunch! Leftover vegan Mac n’ Cheese, cherries and a salad with tons of veggies, sliced almonds and a ginger dressing.
Such a satisfying lunch…
Later I attempted my first batch of dry black beans. When I saw ten servings of organic dry black beans were $1.99 at Whole Foods and a can of 3 servings was about %$1.30, I went the cheap route.
Mid-afternoon got a hankering for some chocolate… so I made a cookies and cream shake! This under-200-cal. snack included soy milk, dark cocoa, sugar, raw cacao nibs and 1/4 scoop of soy protein. So, so, so good!
My afternoon treat fueled me wonderfully for a 4 mile run! This is the longest I’ve gone in a while and it felt so good. My shins are a little sore but I’m hoping icing, foam rolling and rest will make them 100% again.
Dinner was Veganomicon’s black bean burgers! I never follow the recipe so for seasonings I used paprika, pepper and garlic salt; and I added chopped bell pepper, nutritional yeast and a tablespoon of salsa.
I stuck them in the freezer for 10 minutes and then seared the burgers on the grill. I can’t describe how tasty these were. So flavorful!
Served with sweet potato fries (heaven!!) and cherries (more heaven!!!)! I don’t think I’ll ever buy frozen burgers again!
