Hello from North Carolina!
We spent one night in South Carolina and are now on the last leg to Williamsburg, VA. We’re having tons of fun!
By the way, here’s what I packed for the trip. I ate the sushi, Larabar, kombucha and an apple the first day. I also brought a big bag of oats (with cinnamon and turbinado sugar mixed in), three cans of organic soup, and vegan Mac & Chreese for the meals we don’t eat out. I packed Amazing Grass, brown rice protein powder and ground flax in little bags to supplement whatever else I’ll make!
Last night we were pooped when we got to our hotel. Olive Garden was across the street, so dinner was decided! I planned on getting some whole wheat pasta with marinara and veggies, but when I found out their minestrone soup was vegan, my dinner order was changed!
I ordered the salad without cheese and with balsamic/oil on the side. With that I had a hearty bowl of minestrone soup and a few breadsticks. Come to think of it the bread might have been rubbed in butter.How gorgeous is the balsamic with olive oil? I love when food is pretty :)
This morning I spent 10 minutes waking up my muscles on a stationary bike. I also did a few stretches and about 5 minutes of yoga. This gym was pretty sad so I’m saving my real workout for the VA hotel.
We took advantage of the continental breakfast in the hotel. I was so happy with my creation, but I forgot my camera to show you! I had two packets on plain oats topped with PB and a fresh sliced banana. On the side I had a small glass of OJ. I also snagged some Cheerios to go :)
I’m so snacky when I drive! I ate a Gala apple a few hours after breakfast.
Along with some un-pictured tortilla chips I also munched on another banana and PB. I hate the ingredients in this PB, but it’s still better than what I could get in the gas station. Next time I’ll just have to plan better with my snacks!
Well, back to checking blogs on my phone and cleaning up my laptop!
